Apple Cinnamon Infused Bourbon Recipe

We are about to start up our first batch of Apple Cinnamon Bourbon of the year so I figure this would be a good time to share our recipe. It is below.

750 ml Bourbon
3 Granny smith apples 
Cinnamon Stick
1 vanilla bean
Slice and core the apples and then slice the vanilla bean down the center. Take the apple slices, cinnamon, and vanilla bean place them in a large mason jar or whatever you can seal airtight. Add the bourbon, and make sure the apple slices are fully covered. Cover the jar and go and shake it every couple of days. It takes about a month to fully infuse, but feel free to keep it for more or less time as you choose. You will notice that it mellows the bourbon the longer you leave it in. Strain through a strainer or coffee filter. Keep in mind as you are tasting it that the cinnamon flavor will be far less intense after it is strained.
