Red Curry and Basil Chicken Salad Recipe

This salad will be on the lunch special 5/29/12.  Not only is it delicious but is is SUPER simple to make.  We cook our own chickens at Arnold's but buying a roasted chicken is also an easy great option if you don't want to bake it yourself. 
Rub chicken with about 1 TBS. olive oil then add about 1 tsp pepper and salt.  Place in a pan and add about 1/2 cup water to bottom of pan.  Bake at 400 degrees for 20 minutes then cover and lower over to 325.  Bake for about 20 - 25 minutes until temp reads 170 - 180 degrees.  Let cool and take meat off bone (please do not use the skin).  In a large bowl add chicken and the following ingredients...


1 cup mayo
1/4 cup chopped fresh basil
1/4 tsp salt/pepper
1 TBS red curry
1 cup strawberries
1/2 Medium jalapeno finely chopped

I'm serving it on whole wheat toast with leaf lettuce and tomato.  Garnished with french fries.
