Wow your family or guest with this easy onion bleu cheese marmalade. Put on top of fresh fish, chicken or burgers.
1 tablespoon butter
3 tablespoons brown sugar
4 large thinly sliced sweet onion
4 garlic cloves, minced
2 tablespoons red wine vinegar
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon cracked red pepper
1/2 cup bleu cheese
Melt butter in a large nonstick skillet over medium heat. Add sugar to pan; cook 1 minute or until sugar dissolves. Add onion, garlic, and cracked pepper to pan. Cover and cook 30 minutes or until onions are very tender, stirring occasionally. Uncover and add vinegar to onion mixture. Cook, uncovered, 10 minutes or until golden brown, stirring frequently. Stir in salt and pepper.
