We have had a wonderful early spring and feel it is almost summer. Gazpacho was calling me! With no local tomatoes (that would be weird) I decided to put the emphasis on fresh herbs and cucumbers. What I got was a delicious low calorie, healthy soup that reminded me of the months to come!
1/2 cup finely chopped fresh basil, cilantro and mint
1 medium red onion
1 medium green pepper (remove seeds)
1 medium to large jalapeno (remove seeds)
Add above ingredients to food processor and pulverize
Add 2 quarts of fresh squeezed tomato juice or use a good jarred brand
seed and finely chop 4 cucumbers
salt and pepper to taste (about 1 tablespoon for me)
Served chilled
